Salsa!!!

Salsa is a must. Its great by itself or a welcomed addition on many foods. I've tried various recipes but really focused on getting a Costco salsa knockoff. This is my latest recipe and the best part.......super easy, best to make it a day ahead.


Everything goes into a pot and slowly bring to a boil. Boil for 3-5 mins. Let it cool. Enjoy or store in the fridge for weeks.


2 cans diced tomatoes, no salt added - place cans in the pot first. Immersion blend slightly. Alternatively, you can use 2 cans of petite diced tomatoes, if you can find them. (40 mg sodium)

1 Lime, juice

1 - 6 oz can of tomato paste (100mg sodium)

1/2 Large yellow onion, finely diced (use a full small one)

1/2 green bell pepper - finely diced

1 jalapeno pepper - finely diced - no seeds

1 tsp garlic powder

1 tsp ground cumin

1 tsp sugar

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (medium)

1/3 bunch chopped cilantro - add after boiling


yields about 5 cups.

Sodium: 140 mg into 5 cups = 14 mg per 1/2 cup.
